    4 (4 oz each) boneless, skinless chicken breasts
    ⅓ c. Hy-Vee sour cream
    ½ c. Hy-Vee bread crumbs
    ½ tsp. chipotle chile powder
    Hy-Vee salt and pepper, to taste
    8 ears cooked sweet corn
    8 c. spinach
    8 c. red grapes

    Directions

    1. Preheat oven to 350 degrees. Coat each chicken breast with sour cream.
    2. Stir together bread crumbs, chipotle, salt and pepper. Roll each chicken breast in breadcrumb mixture.
    3. Place in a greased 9-by-13-inch baking dish. Bake uncovered 20 to 25 minutes or until internal temperature reaches 165 degrees. Serve with corn, spinach and grapes.
