⅓ c. Hy-Vee sour cream | ||
½ c. Hy-Vee bread crumbs | ||
½ tsp. chipotle chile powder | ||
Hy-Vee salt and pepper, to taste | ||
8 ears cooked sweet corn | ||
8 c. spinach | ||
8 c. red grapes |
Directions
- Preheat oven to 350 degrees. Coat each chicken breast with sour cream.
- Stir together bread crumbs, chipotle, salt and pepper. Roll each chicken breast in breadcrumb mixture.
- Place in a greased 9-by-13-inch baking dish. Bake uncovered 20 to 25 minutes or until internal temperature reaches 165 degrees. Serve with corn, spinach and grapes.
