Choco-Nut Caramel Kiss Cookies

¾ c. Hy-Vee unsalted butter, softened | ||
1 c. Hy-Vee granulated sugar, divided | ||
½ c. packed Hy-Vee brown sugar | ||
1 Hy-Vee egg | ||
1 tsp. Hy-Vee vanilla | ||
1 ¾ c. Hy-Vee flour | ||
1 tsp. Hy-Vee baking soda | ||
¼ tsp. Hy-Vee salt | ||
¼ c. Hy-Vee creamy peanut butter | ||
2 square(s) (1-ounce each) unsweetened baking chocolate, melted | ||
30 Hershey's kisses filled with caramel, unwrapped |
Directions
- Cream butter, 1/2 cup granulated sugar and brown sugar in a large mixing bowl. Beat at medium speed until creamy.
- Beat in egg and vanilla.
- Reduce speed to low and add flour, baking soda and salt. Beat until well mixed.
- Add peanut butter and chocolate to dough. Beat at low speed until well mixed.
- Cover and chill until firm, about 2 hours.
- Preheat oven to 375 degrees. Roll dough into 1-inch balls. Roll balls in remaining 1/2 cup granulated sugar. Place balls 2 inches apart on ungreased cookie sheets.
- Bake 10 to 12 minutes or until cookies just begin to crack.
- Set 1 kiss in the center of each cookie. Cool cookies on wire racks.
