Chocolate Chip Banana Cake

2 medium bananas (about 1 cup mashed) | ||
¼ c. soy milk | ||
2 egg whites | ||
1 tbsp. oil | ||
½ tsp. vanilla | ||
½ c. sugar | ||
¼ c. rolled oats | ||
½ c. all-purpose flour | ||
¼ c. soy flour | ||
2 tsp. baking powder | ||
½ tsp. baking soda | ||
½ tsp. cinnamon | ||
¼ c. mini chocolate chips |
Directions
- Preheat oven to 350 degrees. Grease 9-inch square baking dish.
- Put bananas, soy milk, egg whites, oil and vanilla in blender container and blend well. Pour into a medium mixing bowl. Stir in sugar and oats.
- In small mixing bowl, stir together flour, soy flour, baking powder, baking soda and cinnamon. Add to liquid ingredients and stir to blend well.
- Stir in the mini chocolate chips (or reserve to frost cake - see recipe below).
- Pour into baking pan and bake at 350 degrees for about 30 minutes, until cake tests done in center.
- Cut into 9 (3-inch-square) pieces to serve.
- BANANA CAKE WITH CHOCOLATE FROSTING variation: Make cake as above, but omit chocolate chips. As soon as cake is removed from oven, sprinkle with chocolate chips.
- Let stand 1 minute, then use a table knife to spread the melted chips evenly over the top of the cake.
