Chocolate Coconut Delight Bars

¾ c. coconut milk | ||
2 tsp. almond extract | ||
¾ c. coconut sugar | ||
½ c. blanched almond flour | ||
½ c. coconut flour | ||
¼ tsp. sea salt | ||
½ tsp. baking soda | ||
¼ c. unsweetened shredded coconut | ||
¾ c. chunked Zöet 57% dark chocolate, divided |
Directions
- Preheat oven to 350 degrees.
- In a large bowl, whisk together eggs, coconut milk, almond extract and coconut sugar.
- In a smaller bowl, combine almond flour, coconut flour, salt and baking soda.
- Mix dry ingredients into wet ingredients with a handheld mixer.
- Stir in 1/2 cup chocolate chunks.
- Grease an 8-by-8-inch baking dish.
- Pour batter into dish, then sprinkle shredded coconut and remaining chocolate chunks on top.
- Bake at 350 degrees for 30 minutes.
- Cool for 1 hour. Serve.
