Chocolate Coconut Truffles

Try this recipe for a delicious and nutritious gluten- and dairy-free coconut treat.

1 tbsp. coconut oil | ||
1 c. almonds or walnuts, soaked for at least 4 hours or overnight and drained | ||
6 organic dates, soaked in hot water to soften* (or sweeten with raw honey instead of dates, to taste) | ||
3 tbsp. raw cacao powder | ||
½ tsp. vanilla | ||
¼ tsp. sea salt | ||
Shredded coconut |
Directions
- Place coconut oil, nuts, dates, cacao powder, vanilla and sea salt in a food processor and blend until desired consistency (may choose chunky or smooth texture)
- Roll into small bite-size balls and roll into shredded coconut. Refrigerate for 15 minutes to set.
- *Note: Soak dates in a few tablespoons hot water for a few minutes on one side, turn and soak for a few minutes on the other side.
