6 (6-inch) high fiber tortilla shells | ||
½ red bell pepper, cut into strips | ||
½ green bell pepper, cut into strips | ||
1 c. Hy-Vee salsa |
Directions
- In a medium skillet, cook egg substitute over medium heat for 3 to 5 minutes, or until mixture is thickened throughout but still moist.
- Place cheese on top of warm eggs.
- Place red and green bell peppers on each tortilla.
- Spoon egg mixture over the center of each tortilla.
- Drizzle with salsa.
- Roll up tortillas.
