4 (6 oz each) cod fillets
4 tsp. Hy-Vee Dijon mustard
1 ½ tsp. fresh cilantro, chopped, optional
1 large garlic clove, minced
1 small orange, peel finely grated, juiced (about 1/3 c. juice)
2 tbsp. Hy-Vee unsalted butter
¼ c. Hy-Vee sliced almonds, toasted
Additional orange, sliced, optional

Directions

  1. Rinse fillets and pat dry with paper towels. Sprinkle fillets with salt and pepper to taste; set aside.

  2. For sauce, in a small bowl whisk together mustard, cilantro (if desired), garlic, orange peel and juice; set aside.

  3. Heat a large skillet over medium-high heat. Add butter; swirl to coat pan. Add fillets, skin side up; cook 1 to 2 minutes per side or until golden.

  4. Sprinkle fillets with almonds. Pour sauce around fish; cook 2 minutes or until sauce is slightly reduced and fish flakes easily with a fork. Serve fillets with orange slices (if desired) and top with sauce and almonds.
