Citrus Salad with Honey-Lime Dressing

⅓ c. Hy-Vee canola oil | ||
¼ c. Hy-Vee honey | ||
4 tsp. grated lime peel (2 limes) | ||
6 tbsp. lime juice (3 limes) | ||
4 oranges | ||
1 ½ lbs. jicama, washed, peeled and cut into matchsticks (about 4 cups) | ||
1 (6 ounce) package radishes, washed, halved and thinly sliced | ||
¼ c. chopped fresh cilantro, optional |
Directions
- In a large bowl, combine oil, honey, lime peel and lime juice. Stir well.
- Cut peel from oranges. With a small paring knife, section oranges over bowl with oil mixture, letting juice and sections fall into bowl.
- Add jicama and radishes to orange sections in bowl; toss to combine. Cover and refrigerate 30 minutes.
- Season with salt and pepper to taste, top with chopped cilantro and serve.
