1 lbs. frozen Hy-Vee cooked, tail-on, peeled and deveined shrimp | ||
2 c. chopped pineapple | ||
1 c. chopped red bell pepper | ||
¼ c. Hy-Vee sweetened coconut flakes | ||
⅓ c. light coconut milk | ||
2 tbsp. sweet red chili sauce | ||
¼ tsp. Hy-Vee salt | ||
Hot cooked rice, optional |
Directions
- Thaw shrimp according to package directions.
- Meanwhile, cook pineapple and bell pepper over medium-high heat in a large skillet for 3-4 minutes, stirring occasionally. Drain and then add in shrimp, coconut flakes, coconut milk, chili sauce and salt. Cook for 4 to 5 minutes or until heated thoroughly, stirring occasionally.
- If desired, serve over rice.
