Coconut Lime Chicken Drumsticks

Description
Once you taste this combo of lime and coconut together on crispy baked chicken drumsticks, you'll question why you haven't been using them all along. Or at the very least, you'll have new weeknight go-to.

½ c. cream of coconut | ||
1 tbsp. lime juice | ||
1 tbsp. lime zest | ||
6 chicken drumsticks | ||

Directions
- Whisk together cream of coconut, lime juice and lime zest in a large bowl. Add drumsticks and stir to coat with coconut-lime mixture. Let drumsticks marinate at least 30 minutes before baking.
- Preheat oven to 375 degrees.
- Line a baking sheet with foil, coat evenly with Hy-Vee nonstick cooking spray. Place drumsticks on baking sheet, skin side up; bake 30 minutes. Flip drumsticks;bake additional 15 minutes. Cook drumsticks until they reach an internal temperature of 165 degrees.
- To serve, garnish with lime zest and cilantro, if desired.
