    Cake:
    2 tbsp. Hy-Vee vegetable oil
    1 Hy-Vee large egg
    ½ c. Hy-Vee skim milk
    1 ½ c. Hy-Vee reduced fat baking mix
    ¾ c. Hy-Vee sugar
    Topping:
    ¼ c. packed Hy-Vee brown sugar
    2 tbsp. Hy-Vee reduced fat baking mix
    1 tsp. Hy-Vee ground cinnamon
    1 tbsp. Hy-Vee butter
    ½ c. Hy-Vee pecan pieces

    Directions

    1. Heat oven to 375 degrees.
    2. Combine vegetable oil, egg and milk in a large mixing bowl. Combine baking mix and sugar (not brown sugar), add to milk mixture and mix well.
    3. Pour into a greased 9-by-9-inch baking pan. In a separate bowl, combine brown sugar, 2 tbsp baking mix, cinnamon, butter and pecan pieces. Sprinkle on top.
    4. Bake for 25 minutes or until a knife comes out clean.
