Coleslaw with Avocado and Balsamic Vinaigrette

1 avocado, diced | ||
2 tsp. lemon juice | ||
1 (16 oz) pkg Hy-Vee coleslaw mix | ||
3 green onions, chopped | ||
1 c. seeded diced tomato | ||
½ yellow bell pepper, diced | ||
½ c. purchased balsamic vinaigrette dressing | ||
1 tsp. Hy-Vee Dijon mustard | ||
1 clove(s) garlic, minced | ||
salt and pepper, to taste |
Directions
- Place diced avocado in a large bowl. Sprinkle with lemon juice to coat.
- Add coleslaw mix, green onion, tomato and yellow bell pepper. Toss.
- In a small bowl, combine vinaigrette dressing, Dijon mustard and garlic. Pour over salad and toss to coat. Season with salt and pepper.
