2 c. yellow cornmeal | ||
2 tbsp. potato starch | ||
2 tbsp. white sugar | ||
1 ½ tsp. gluten-free baking powder | ||
2 eggs, separated | ||
1 tsp. xanthan gum | ||
1 tsp. salt | ||
1 c. milk | ||
½ tsp. baking soda | ||
½ c. corn oil |
Directions
- Grease an 8-by-8-by-2-inch baking pan.
- In a medium bowl, stir together cornmeal, potato starch, white sugar and baking powder.
- Separate eggs. Beat egg yolks in 1 bowl. In a second bowl, beat egg whites with clean beaters until stiff.
- In a small bowl, combine xanthan gum, salt, milk, baking soda and corn oil.
- Add egg yolks and milk mixture to cornmeal mixture, just until moistened.
- Fold in beaten egg whites.
- Turn mixture into greased pan.
- Bake at 400 degrees for 20 to 25 minutes.
