1 c. cornmeal (preferably whole-grain) | ||
¾ c. flour (may be all or part whole wheat) | ||
¼ c. soy flour | ||
1 tbsp. baking powder | ||
2 egg whites | ||
1 c. soymilk | ||
1 c. creamed corn | ||
1 tbsp. soy oil |
Directions
- Preheat oven to 400 degrees. Lightly grease 9-inch pie plate.
- In medium mixing bowl, combine cornmeal, flour, soy flour and baking powder.
- In another bowl, whisk together egg whites, soymilk, creamed corn and soy oil. Add this mixture to the dry ingredients, stirring just to blend.
- Pour batter in pie plate. Bake at 400 degrees for about 25 minutes, until center tests done. If bread is browning too quickly, cover loosely with foil.
- Cut into 8 wedges to serve.
