Cranberry Apple Pie

4 Granny Smith apples, peeled, cored and sliced | ||
1 (12 oz) pkg fresh cranberries | ||
1 ¾ c. Hy-Vee granulated sugar, divided | ||
⅓ c. instant tapioca | ||
3 ½ c. crushed Hy-Vee wheat crackers, divided | ||
½ c. Hy-Vee butter, melted, divided | ||
⅓ c. Hy-Vee English walnut pieces |
Directions
- Preheat oven to 375 degrees.
- In a large bowl, combine apples, cranberries and 1-1/2 cups sugar. Toss well and set aside for 20 minutes.
- Stir in tapioca and let sit another 20 minutes.
- Meanwhile, combine 3 cups crushed wheat cracker with 4 tablespoons melted butter. Press into a 9-inch pie plate.
- Pour apple mixture into pie crust. Bake uncovered 30 minutes.
- Meanwhile in a medium bowl, combine remaining 1/2 cup crushed wheat crackers, 1/4 cup sugar, 4 tablespoons melted butter and walnut pieces. Sprinkle evenly over pie and bake another 20 minutes.
- Place on a cooling rack to cool.
