Cranberry Apple Stuffing

2 c. chopped celery | ||
½ c. chopped onion | ||
1 tsp. thyme leaves | ||
1 tsp. rosemary leaves | ||
1 tsp. parsley flakes | ||
2 red tart apples, cored and chopped | ||
1 ¼ c. dried cranberries | ||
1 tsp. grated orange peel, optional | ||
4 c. unseasoned dry bread cubes | ||
1 c. chicken broth |
Directions
- Melt butter in a skillet. Add celery and onion. Saute for 5 minutes. Remove pan from heat. Stir in thyme, rosemary, parsley, apples, cranberries and orange peel, if desired.
- Place bread cubes in a large bowl. Stir in fruit/vegetable mixture. Add broth. Toss to combine.
- Place in a 9-by-13-inch baking dish.
- Bake, covered, at 325 degrees for 35 to 40 minutes.
