Creamy Potato Casserole

8 medium russet potatoes, peeled and cubed | ||
1 (8 oz) tub Hy-Vee onion and chive cream cheese, softened | ||
1 (8 oz) container Hy-Vee sour cream | ||
½ c. Hy-Vee butter, softened | ||
2 tsp. Hy-Vee salt | ||
⅓ c. Hy-Vee grated Parmesan cheese |
Directions
- Preheat oven to 350 degrees.
- Cook potatoes in boiling water until tender. Drain.
- In a large mixing bowl, beat together potatoes, cream cheese, sour cream, butter and salt with an electric mixer.
- Spoon mixture into a greased 2-quart casserole. Sprinkle with Parmesan cheese.
- Bake uncovered for 25 minutes or until thoroughly heated.
