1 lbs. salmon fillet | ||
1 tsp. Hy-Vee Select olive oil | ||
3 tbsp. Hy-Vee butter | ||
¼ c. diced red onion | ||
1 (12 oz) pkg That's Smart frozen California blend vegetables | ||
1 ½ c. Hy-Vee half-and-half | ||
¼ c. Hy-Vee flour | ||
¼ c. Hy-Vee chicken broth | ||
¼ c. Hy-Vee grated Parmesan cheese | ||
1 tbsp. Hy-Vee dried parsley | ||
1 tsp. Hy-Vee Italian seasoning | ||
Hy-Vee salt and Hy-Vee pepper |
Directions
- Cook pasta according to package directions. Drain.
- Meanwhile, in a large skillet, over medium heat cook salmon in olive oil until it flakes, about 8 minutes. Flake salmon. Remove from pan. Set aside.
- In the same skillet, melt butter. Add onions and vegetables. Cook until onion is tender.
- Whisk together half-and-half, flour and chicken broth. Add mixture to skillet. Stir to combine.
- Bring mixture to a boil, stirring occasionally. Simmer 2 minutes. Stir in cooked salmon, cheese, parsley, Italian seasoning, salt and pepper. Heat through. Serve with hot pasta.
