    1 (12 oz) pkg fettuccine, uncooked
    1 lbs. salmon fillet
    1 tsp. Hy-Vee Select olive oil
    3 tbsp. Hy-Vee butter
    ¼ c. diced red onion
    1 (12 oz) pkg That's Smart frozen California blend vegetables
    1 ½ c. Hy-Vee half-and-half
    ¼ c. Hy-Vee flour
    ¼ c. Hy-Vee chicken broth
    ¼ c. Hy-Vee grated Parmesan cheese
    1 tbsp. Hy-Vee dried parsley
    1 tsp. Hy-Vee Italian seasoning
    Hy-Vee salt and Hy-Vee pepper

    Directions

    1. Cook pasta according to package directions. Drain.
    2. Meanwhile, in a large skillet, over medium heat cook salmon in olive oil until it flakes, about 8 minutes. Flake salmon. Remove from pan. Set aside.
    3. In the same skillet, melt butter. Add onions and vegetables. Cook until onion is tender.
    4. Whisk together half-and-half, flour and chicken broth. Add mixture to skillet. Stir to combine.
    5. Bring mixture to a boil, stirring occasionally. Simmer 2 minutes. Stir in cooked salmon, cheese, parsley, Italian seasoning, salt and pepper. Heat through. Serve with hot pasta.
