Directions

  1. Preheat oven to 400 degrees. Scrub and dry potatoes. Pierce each with a fork 3 to 4 times. Place potatoes in a rimmed baking pan.

  2. Bake potatoes for 50 to 60 minutes or until tender. Cool to room temperature; refrigerate, uncovered, for several hours or overnight.

  3. Heat 2 in. vegetable oil to 300 degrees in a 5- to 6-qt. Dutch oven.

  4. Meanwhile, place a wire rack in a large rimmed baking pan. Break or cut each cold potato into 8 pieces. Fry potato pieces, in batches, for 5 to 6 minutes or until golden brown. Remove with a slotted spoon and drain on wire rack in baking pan.

  5. Increase temperature of vegetable oil to 375 degrees. Fry the potatoes a second time for 2 to 4 minutes or until browned and very crispy. Drain on wire rack in pan. Season with salt before serving.
