1 (1-inch thick) bone-in pork chop, about 10 oz |
Directions
- Heat olive oil in a small frying pan over medium heat.
- Add garlic, cumin and oregano. Cook until the garlic is just beginning to brown, about 20 to 30 seconds. Immediately add the lime juice and bring to a boil. Boil until slightly thickened, 1 to 2 minutes. Add salt and pepper to taste. Cool to room temperature.
- Place the pork chop in a shallow bowl. Pour half the sauce on top of chop. Place the other half of sauce in the refrigerator.
- Turn the pork chop to coat the meat. Cover and marinate in the refrigerator for 30 to 60 minutes.
- Transfer the chop to a plate, pour the sauce over and serve at once.
- Preheat grill or broiler. Discard marinade.
- Grill or broil the pork for 2 to 4 minutes per side, until internal temperature reaches 145 degrees.
- In a saucepan, reheat the remaining half of the sauce.
