Directions
On low speed, mix in flour, cornstarch, salt, and baking soda. Continue beating at low speed for 3 minutes, or until dough comes together. Stir in vanilla. Divide dough in to two portions and cover with plastic wrap. Refrigerate 30 to 60 minutes or until chilled.
Preheat oven to 375 degrees. Remove dough from refrigerator and roll each portion of dough to 1/4-inch thickness between two sheets of parchment paper. Cut into desired shapes using 3-inch cookie cutters and place on an ungreased cookie sheet.
Bake 8 to 10 minutes or until cookies are set and light golden brown on the bottoms. Remove cookies from oven and cool completely on a wire cooling rack. Decorate cookies as desired with frosting, sprinkles, and/or colored sugars.
