Diabetic Pumpkin Spice Bread

¼ c. canola oil | ||
2 eggs | ||
1 c. Hy-Vee pumpkin | ||
1 c. all-purpose flour | ||
½ c. soy flour | ||
2 tsp. baking powder | ||
1 tbsp. pumpkin pie spice | ||
½ c. Hy-Vee raisins | ||
½ c. Hy-Vee dried cranberries | ||
½ c. chopped walnuts, optional |
Directions
- Preheat oven to 325 degrees.
- In mixing bowl, beat sugar and oil until well mixed. Beat in eggs and pumpkin.
- In a separate bowl, mix together all-purpose flour, soy flour, baking powder and pumpkin pie spice. Gradually add to pumpkin mixture. Add raisins, cranberries and walnuts. Pour into greased loaf pan.
- Bake for 1 hour at 325 degrees or until toothpick inserted into bread comes out clean.
