Easy Spinach Minestrone

1 large onion, chopped | ||
1 clove(s) garlic, minced | ||
4 c. Hy-Vee chicken broth | ||
1 (16 oz) can Hy-Vee kidney beans, drained and rinsed | ||
1 (14.5 oz) can Hy-Vee Italian-style diced tomatoes, undrained | ||
2 medium carrots, peeled and sliced | ||
½ c. uncooked elbow macaroni | ||
½ (10 oz) pkg Hy-Vee frozen chopped spinach, thawed |
Directions
- Saute onion and garlic in a medium saucepan until tender.
- Add chicken broth, kidney beans, tomatoes, carrots and macaroni.
- Cook over medium heat for 20 minutes or until vegetables and macaroni are tender.
- Stir in spinach. Bring to a boil.
- Remove from heat. Let stand 5 to 10 minutes before serving.
