Directions
Whisk together eggs and water. Melt butter in an 8-inch skillet over medium-high heat. Cook bell pepper in butter until softened. Add egg mixture to skillet; cook until set. Season to taste with salt and black pepper. Fold egg in half.
Place two waffles and chicken strips on a rimmed baking pan. Top waffles with cheese slices. Broil 4-inches from heat about 1 minute or until cheese is melted and chicken is crisp. To assemble sandwich, place chicken strips on a cheese-topped waffle; brush with half of syrup mixture. Add remaining cheese-topped waffle; top with omelet and avocado slices, if desired. Add remaining waffle. Pour remaining syrup mixture on top.
