1 c. uncooked Hy-Vee multigrain pasta | ||
1 (16 oz) bag Hy-Vee Fiesta Blend vegetables | ||
2 tsp. Hy-Vee Select olive oil | ||
1 lbs. pork chops, trimmed and cut into thin strips | ||
½ c. Hy-Vee mild salsa | ||
½ c. Hy-Vee light ranch dressing |
Directions
- Cook pasta according to package directions. Add vegetables during the last 5 minutes of cooking. Drain well.
- Meanwhile, heat oil in a large, non-stick skillet over medium-high heat.
- Add pork and saute until golden brown and internal temperature reaches at least 145 degrees, about 6 minutes.
- Stir in pasta and vegetables. Reduce heat to low.
- Combine salsa and ranch dressing and add to skillet.
- Serve hot.
