    1 ½ (15.5-oz. each) jars Hy-Vee Select medium corn & black bean salsa
    ¾ c. Hy-Vee finely shredded taco cheese, divided
    1 (8.5-oz.) pkg. Hy-Vee corn muffin mix
    1 Hy-Vee large egg
    ⅓ c. Hy-Vee 2% reduced-fat milk
    Green onions, sliced, for garnish

    Directions

    1. Preheat oven to 400 degrees. Cook beef in a 10-inch oven-safe skillet until brown; stirring occasionally. Drain. Stir in salsa; bring to a boil. Remove from heat. Stir in 1/2 cup cheese. Prepare corn muffin mix according to package directions, using egg, and milk. Spread on top of beef mixture. Bake 8 to 10 minutes or until toothpick inserted near center comes out clean. Sprinkle with remaining 1/4 cup cheese; bake 1 to 2 minutes or until melted. Let stand 5 minutes. Garnish with sliced green onions, if desired.
