Flax Multibran Muffins

2 ¾ c. Flax Plus multibran cereal | ||
1 ¼ c. vanilla soymilk | ||
1 c. flour | ||
¼ c. soy flour | ||
½ c. sugar | ||
1 tbsp. baking powder | ||
¼ tsp. salt | ||
1 Omega-3 egg | ||
¼ c. canola oil | ||
1 c. frozen blueberries or 1 mashed ripe banana |
Directions
- Heat oven to 400 degrees. Spray 12 muffin cups with nonstick cooking spray.
- Combine cereal and soymilk. Let sit for 5 minutes.
- Combine flour, soy flour, sugar, baking powder and salt in a separate bowl.
- Combine cereal/soymilk mixture, flour mixture, egg and canola oil. Fold in blueberries or mashed banana. Spoon batter into 12 muffin cups.
- Bake 20 minutes. Remove muffins from muffin cups.
