    2 ¾ c. Flax Plus multibran cereal
    1 ¼ c. vanilla soymilk
    1 c. flour
    ¼ c. soy flour
    ½ c. sugar
    1 tbsp. baking powder
    ¼ tsp. salt
    1 Omega-3 egg
    ¼ c. canola oil
    1 c. frozen blueberries or 1 mashed ripe banana

    Directions

    1. Heat oven to 400 degrees. Spray 12 muffin cups with nonstick cooking spray.
    2. Combine cereal and soymilk. Let sit for 5 minutes.
    3. Combine flour, soy flour, sugar, baking powder and salt in a separate bowl.
    4. Combine cereal/soymilk mixture, flour mixture, egg and canola oil. Fold in blueberries or mashed banana. Spoon batter into 12 muffin cups.
    5. Bake 20 minutes. Remove muffins from muffin cups.
