Flax Oatmeal Cookies

1 c. margarine or butter, softened | ||
1 c. white sugar | ||
1 c. brown sugar | ||
2 eggs | ||
1 tsp. vanilla | ||
2 c. all-purpose flour | ||
1 c. uncooked oats | ||
½ c. milled flaxseed* | ||
½ tsp. salt | ||
1 tsp. baking powder | ||
1 tsp. baking soda | ||
1 ½ c. chopped walnuts or almonds | ||
2 c. chocolate chips, optional |
Directions
- Cream margarine, white sugar and brown sugar until light and fluffy. Add eggs and vanilla and beat well.
- In a separate bowl, mix together flour, oats, milled flaxseed, salt, baking powder and baking soda. Stir into creamed mixture. Add walnuts and chocolate chips. Mix until blended.
- Form dough into 1-inch balls. Place balls on an ungreased cookie sheet, leaving 2 inches between cookies.
- Bake at 350 degrees for about 10 minutes.
- *Either use purchased milled flaxseed, or grind whole flaxseed in a coffee grinder to a granular, free-flowing meal.
