Flax Seed Crackers with Variations

¼ c. flax seed | ||

1 ½ c. all-purpose flour | ||
½ tsp. baking powder | ||
½ tsp. salt | ||
4 tsp. butter or margarine, melted | ||
½ c. skim milk |
Directions
- Preheat oven to 325 degrees.
- Add flax seed, ground flax, flour, baking powder, salt and margarine (or butter) to the bowl of a stand-up mixer. With the paddle attachment, mix on low speed until the mixture resembles coarse meal. Stir in milk and mix until mixture forms a soft dough. You can also mix the dough by hand.
- Wrap dough in plastic wrap and chill for 10 minutes.
- Divide the dough into quarters. Turn out dough onto a lightly floured board.
- Roll out one of the quarters very thinly to 1/16-inch thick. Cut into 2-1/2-inch squares. Transfer to an ungreased baking sheet.
- Repeat with the other quarters of the dough.
- Bake 20 minutes, until crisp and golden.
- Variations:
- Onion: add 1 tablespoon onion soup mix.
- Cheese: add 1 cup finely shredded cheddar cheese.
- Italian: add 1 tablespoon oregano and 1 cup finely shredded mozzarella cheese.
