Fresh Cantaloupe Salsa

½ large cantaloupe | ||
¾ c. finely diced red bell pepper | ||
¼ c. finely chopped cilantro | ||
2 tbsp. finely chopped green onions | ||
1 jalapeno pepper, finely minced | ||
2 tbsp. lime juice (juice of 1 lime) | ||
1 tsp. red pepper flakes, optional | ||
1 packet(s) Hy-Vee tortilla chips, optional |
Directions
- Remove seeds and rind from cantaloupe. Chop into very small diced pieces.
- Place chopped cantaloupe into a mixing bowl.
- Add diced red bell pepper, cilantro, onion, jalapeno pepper and lime juice. Stir to combine.
- Add red pepper flakes (if desired).
- Cover and chill.
- Serve with tortilla chips or with grilled chicken or steak.
