1 lbs. fresh green beans, trimmed
2 tbsp. Gustare Vita olive oil
1 (8-oz.) pkg. Monterey sliced baby bella mushrooms
½ c. yellow onion, chopped
3 clove(s) garlic, minced
1 c. Naturesweet cherub tomatoes, halved
Hy-Vee salt, to taste
Hy-Vee ground black pepper, to taste

Directions

  1. Add green beans to a large saucepan of boiling salted water. Cook for 5 minutes or until crisp-tender. Transfer beans to a bowl of ice water. Cool for 10 minutes. Drain beans; set aside. 

  2. Heat oil over medium-high heat in a large skillet. Add mushrooms, onion, and garlic; cook for 5 minutes. Add beans and cook 5 minutes more. Stir in tomatoes. Season to taste with salt and pepper.
