Fried Green Tomatoes

2 medium green tomatoes, sliced 1/4-inch thick | ||
salt, to taste | ||
¼ c. gluten-free cornmeal | ||
¼ c. grated Parmesan cheese | ||
2 tbsp. gluten-free baking mix | ||
¾ tsp. garlic salt | ||
½ tsp. crushed leaf oregano | ||
⅛ tsp. black pepper | ||
1 egg, beaten | ||
¼ c. corn oil |
Directions
- Sprinkle tomato slices with salt. Allow to drain on paper towels for 30 to 60 minutes.
- Meanwhile, combine cornmeal, Parmesan cheese, baking mix, garlic salt, oregano and pepper on a shallow plate.
- Dip each tomato slice into the beaten egg, then into the cornmeal mixture.
- In a medium skillet, heat oil on medium-high.
- Fry tomato slices for 2 minutes on each side, or until golden brown.
- Drain slices on a wire rack covered with paper towels.
- Serve while hot.
