Fruit and Pecan Pilaf

¼ c. diced sweet onion | ||
2 tbsp. Hy-Vee vegetable oil | ||
3 c. cooked Hy-Vee instant brown rice | ||
½ c. Hy-Vee dried cranberries | ||
¾ c. Hy-Vee pecan pieces, toasted * | ||
½ tsp. orange zest |
Directions
- In a medium skillet, sauté onion in vegetable oil until tender.
- In a large bowl, combine onion, rice, cranberries, pecans and orange zest. Mix well.
- Serve immediately.
- * To toast pecan pieces, spread onto a shallow baking pan. Bake at 350 degrees for 10 to 12 minutes, stirring occasionally.
