Fruit Salad with Pound Cake Croutons

Everyone always says croutons are the best part of a salad—especially if they're made out of pound cake.

1/2 of a 12-ounce pound cake, cubed | ||
½ c. blueberries | ||
1 c. green seedless grapes | ||
2 c. fresh pineapple chunks | ||
2 c. halved, hulled fresh strawberries | ||
¼ c. Hy-Vee orange juice concentrate | ||
2 tbsp. Hy-Vee honey | ||
1 tbsp. chopped fresh mint leaves |
Directions
- Place pound cake cubes on baking sheet and bake at 350 degrees for 12 minutes, stirring occasionally. Cool.
- Meanwhile, toss blueberries, grapes, pineapple and strawberries together in a large bowl.
- In a small bowl, stir together juice concentrate, honey and mint. Add to fruit; toss gently to coat.
- Top fruit with pound cake croutons.
