1 (10 oz) can Hy-Vee premium breast of chicken, drained | ||
½ c. light mayonnaise | ||
½ c. Hy-Vee cashew halves and pieces | ||
1 large Braeburn apple, diced | ||
¼ c. packed Hy-Vee raisins | ||
8 large lettuce leaves |
Directions
- In a large bowl, combine chicken and mayonnaise. Stir to coat. Stir in cashews, apple and raisins. Cover and refrigerate until serving time.
- To serve, arrange 3/4 cup of chicken mixture over two lettuce leaves. Repeat for each serving.
