5 lbs. medium russet potatoes, peeled and quartered
6 clove(s) garlic, peeled
½ c. Hy-Vee salted butter
2 c. Hy-Vee heavy whipping cream
Hy-Vee salt and Hy-Vee black pepper, to taste
1 tbsp. Gustare Vita extra virgin olive oil

Directions

  1. Place potatoes and garlic in a large pot. Add enough cold water to cover potatoes.

  2. Bring to a boil over high heat. Reduce heat to medium-low; simmer 15 to 20 minutes or until fork-tender.

  3. Meanwhile, combine heavy cream and butter in a small saucepan. Cook over medium-low heat until butter is melted. Remove from heat.

  4. When potatoes are done, drain. Return potatoes to pot. Mash with a potato masher. Add the hot cream mixture gradually; continue mashing until desired consistency. Season to taste with salt and pepper. Transfer to a serving bowl. Drizzle with olive oil.
