¼ c. Hy-Vee low-fat plain yogurt | ||
2 tsp. finely chopped crystallized ginger | ||
Hy-Vee salt and Hy-Vee pepper, to taste | ||
¼ c. Hy-Vee roasted pistachios, chopped |
Directions
- Preheat oven to 375 degrees. Place roast fat-side-up in a greased 8-by-8-inch baking dish. Using a sharp knife, score fat in a diamond pattern. Stir together yogurt, ginger, salt and pepper. Spread mixture over roast. Sprinkle with pistachios.
- Roast for 60 minutes or until internal temperature reaches 145 degrees. Loosely cover pan with foil if the pistachios begin to brown too much.
- Allow roast to rest for 10 minutes before carving.
