    1 (2 lb) boneless pork loin roast
    ¼ c. Hy-Vee low-fat plain yogurt
    2 tsp. finely chopped crystallized ginger
    Hy-Vee salt and Hy-Vee pepper, to taste
    ¼ c. Hy-Vee roasted pistachios, chopped

    Directions

    1. Preheat oven to 375 degrees. Place roast fat-side-up in a greased 8-by-8-inch baking dish. Using a sharp knife, score fat in a diamond pattern. Stir together yogurt, ginger, salt and pepper. Spread mixture over roast. Sprinkle with pistachios.
    2. Roast for 60 minutes or until internal temperature reaches 145 degrees. Loosely cover pan with foil if the pistachios begin to brown too much.
    3. Allow roast to rest for 10 minutes before carving.
