Ginger-Lemon Rice Pilaf

1 tbsp. Hy-Vee butter | ||
1 clove(s) garlic, minced | ||
1 (6.09 oz) box original rice pilaf mix | ||
1 ¾ c. warm water | ||
1 (1-inch) piece fresh ginger, peeled | ||
Juice of half a lemon | ||
Hy-Vee pepper, to taste | ||
½ c. coarsely chopped Hy-Vee pecans, toasted |
Directions
- Melt butter in a medium saucepan over medium heat. Add garlic and rice. Stir until garlic and rice are golden, about 4 minutes.
- Stir in water, ginger, lemon juice, spice packet from the pilaf mix and pepper, to taste.
- Cover and simmer for 20 to 25 minutes or until most of the water is absorbed.
- Remove piece of ginger and discard. Fluff rice with a fork and stir in pecans.
