Ginger-Spiced Papaya Bread

2 Hy-Vee eggs | ||
1 c. peeled, seeded, mashed papaya | ||
¼ c. Hy-Vee chopped pecans | ||
½ c. Hy-Vee dried cherries | ||
1 ½ c. Hy-Vee flour | ||
¼ tsp. baking powder | ||
1 tsp. Hy-Vee baking soda | ||
½ tsp. Hy-Vee ground cinnamon | ||
¼ tsp. Hy-Vee ground nutmeg | ||
½ tsp. Hy-Vee ground ginger |
Directions
- Preheat oven to 325 degrees.
- Cream together sugar and butter. Add eggs and beat until fluffy.
- Mix in papaya, pecans and cherries.
- In a medium mixing bowl, stir together flour, baking powder, baking soda, cinnamon, nutmeg and ginger.
- Add to papaya mixture and mix until combined.
- Pour batter into a greased 9-by-5-inch loaf pan. Bake for 45 minutes to 1 hour or until inserted toothpick comes out clean.
