1 (18.25 oz) pkg Hy-Vee German chocolate cake mix | ||
3 Hy-Vee large eggs | ||
½ c. Hy-Vee canola oil | ||
1 ¼ c. water | ||
¼ c. Hy-Vee margarine, melted | ||
4 oz. Hy-Vee reduced-fat cream cheese, softened | ||
1 c. Hy-Vee powdered sugar | ||
½ tsp. lemon extract |
Directions
- Preheat oven to 350 degrees.
- Add cinnamon, allspice, ginger and nutmeg to cake mix. Prepare cake mix using eggs, oil and water according to package directions for cupcakes. Bake. Let cool.
- In a medium mixing bowl, combine margarine, cream cheese, powdered sugar and lemon extract. Beat on medium speed with an electric mixer until smooth. Spread evenly on cupcakes.
