Description
This fresh take on a classic burger gets an update with arugula, cucumber, homemade pickled red onion, and crumbled Gorgonzola cheese.

¼ c. Hy-Vee white vinegar | ||
¼ c. Hy-Vee granulated sugar | ||

1 red onion, thinly sliced | ||
4 (5-oz. each) 85%-lean ground chuck patties | ||
4 Hy-Vee bakery hamburger buns | ||
3 c. fresh arugula | ||
1 cucumber, thinly sliced | ||
½ c. crumbled gorgonzola cheese |

Directions
- For the onions, bring vinegar, sugar and salt to a simmer. Pour over sliced onion and let stand at least 20 minutes at room temperature. Drain thoroughly.
- Lightly grease grill rack. Prepare a charcoal or gas grill for direct cooking over medium heat.
- Grill patties for 10 to 12 minutes or until internal temperature of patties are 160 degrees, turning once halfway through.
- To assemble burgers, top bottom bun with arugula, grilled patty, cucumber, red onion, gorgonzola and top bun.
