    1 (18.25 oz) pkg Hy-Vee extra-moist spice cake
    ½ c. silken tofu
    1 c. water
    2 egg
    Gooey Filling: The Miller's Apple Butter
    Goblin Frosting: Sans Sucre cheesecake mousse mix, prepared according to package directions

    Directions

    1. Combine cake mix, tofu, water and eggs in a mixing bowl; blend until moist. Fill mini cupcake holders 2/3 full and bake at 350 degrees for 20-25 minutes or until a toothpick inserted in comes out clean.
    2. For the filling, place apple butter in a pastry bag with tip inserted. Insert pastry bag into top of cooled cupcake and pipe in filling.
    3. Frost with prepared mousse mix. Refrigerate cupcakes until serving time and refrigerate any leftovers.
