Greek Feta and Pine Nut Dip

½ c. pine nuts | ||
2 (6 oz each) containers Hy-Vee plain Greek yogurt | ||
1 (6 oz) container crumbled feta cheese | ||
¼ tsp. dried mint, optional | ||
¼ tsp. Hy-Vee garlic powder | ||
⅛ tsp. freshly ground Hy-Vee black pepper | ||
½ c. finely chopped red bell pepper | ||
¼ c. finely chopped fresh parsley | ||
¼ c. finely chopped fresh basil | ||
Hy-Vee pita chips, for serving |
Directions
- Preheat oven to 350 degrees.
- Place pine nuts on a baking sheet and toast, stirring occasionally until golden brown, about 7 minutes. Cool.
- Combine yogurt, cheese, mint, garlic and black pepper in a medium bowl. Fold in pine nuts, red bell pepper, parsley and basil. Cover and chill for at least an hour.
- Serve with pita chips, if desired.
