Green Bean Casserole with Pecans and Cranberries

1 lbs. green beans, trimmed | ||
1 ½ tbsp. butter or extra-virgin olive oil (to make it dairy-free) | ||
⅓ c. pecans, chopped | ||
1 clove(s) garlic, minced | ||
⅓ c. cranberries | ||
Salt and pepper, to taste | ||
Ground flaxseed, optional |
Directions
- Simmer green beans in a large skillet in salted water for 2 minutes. Drain and set aside.
- In the same skillet, melt the butter or heat the oil. Saute pecans and garlic until fragrant.
- Stir in the green beans and cranberries and heat through. Season to taste with salt and pepper. Stir in ground flaxseed, if desired.
