Green Beans with Shallots and Red Peppers

1 lbs. fresh green beans, washed and trimmed | ||
Hy-Vee salt | ||
1 tbsp. Hy-Vee unsalted butter | ||
1 tbsp. Hy-Vee Select olive oil | ||
1 large shallot, thinly sliced | ||
1 small red bell pepper, seeded and thinly sliced | ||
Hy-Vee pepper, to taste |
Directions
- Blanch green beans in boiling salted water for 3 minutes. Drain and place in ice water. Drain well and set aside.
- Heat butter and oil in a large skillet over medium heat. Cook shallot and red pepper for 5 to 10 minutes until shallots and peppers are beginning to turn brown and have slightly softened.
- Add beans to skillet and toss until heated through. Season to taste with salt and pepper.
