Grilled Cheese Quesadillas with Fruit Salsa

1 Anjou pear, diced | ||
1 c. diced strawberries | ||
1 kiwi, peeled and diced | ||
1 tbsp. chopped cilantro | ||
1 tbsp. Hy-Vee honey | ||
1 tsp. lime juice | ||
Hy-Vee ground cinnamon | ||
8 (6-inch) Hy-Vee flour tortillas | ||
1 c. Hy-Vee 2% shredded mozzarella cheese, divided |
Directions
- Combine pear, strawberries, kiwi, cilantro, honey and lime juice in a small bowl. Set aside.
- Spray one side of each tortilla with cooking spray and sprinkle with cinnamon. Place cinnamon-side-down on a counter-top grill. Top each with 2 tablespoons cheese, 1/4 cup fruit mixture and an additional 2 tablespoons cheese. Top each with remaining tortillas, cinnamon-side-up. Close lid.
- Grill 4 to 6 minutes or until cheese is melted.
- Cut each into quarters and serve warm with remaining fruit mixture.
