1 lbs. peeled, deveined shrimp | ||
1 Vidalia onion, cut into 1-inch pieces | ||
1 red bell pepper, seeded, cut into 1-inch pieces | ||
1 lbs. asparagus, trimmed | ||
Hy-Vee salt and Hy-Vee black pepper to taste |
Directions
- Combine olive oil, cayenne pepper and lemon peel. Set aside.
- On each of 8 skewers, thread shrimp, onion and bell pepper.
- Lay asparagus side-by-side and pierce onto 2 wooden skewers to form a raft.
- Place asparagus rafts and shrimp kabobs on the grill. Brush with olive oil mixture.
- Grill kabobs over medium heat 3-4 minutes on each side or until shrimp are done.
- Grill rafts 10 minutes, turning once.
- Season with salt and pepper before serving.
