Ham-and-Gouda Brunch Pastry

Filled with sweet potatoes, shredded gouda cheese, and ham, this bunch pastry is so "gouda" you can't help but have more than one piece!
Directions
Preheat oven to 425 degrees. Line a baking sheet with parchment paper. Place pie pastry on center of baking sheet; set aside. 
Sprinkle 1/4 cup of shredded Gouda 1/2-inch edge of pie pastry. Place a layer of thinly sliced sweet potatoes on top of cheese; season with salt; repeat layers 2 more times finishing with a layer of cheese. Fold uncovered pie crust up over filling, pleating as necessary. Spray pie crust with nonstick cooking spray. 
Bake 25 minutes; if necessary, cover with aluminum foil to prevent over-browning. Remove from oven; top with ham and 1/2 cup shredded cheese. Bake additional 10 minutes or until cheese is melted and crust is golden brown. Remove from oven; garnish with fresh thyme, if desired.
