    Give a spicy kick to a traditional Mexican grapefruit Paloma. Use Hatch peppers while they're in season or substitute jalapenos.

    4 oz. fresh grapefruit juice
    3 oz. silver tequila
    2 oz. fresh lime juice
    1 fresh hatch pepper, sliced, plus additional for garnish
    1 tbsp. agave nectar, optional
    12 oz. sparkling wine, such as champagne, divided

    Directions

    1. Add grapefruit juice, tequila, lime juice, hatch pepper, and, if desired, agave, to a cocktail shaker. Muddle ingredients using a muddler or a spoon. Add ice to cocktail shaker and shake thoroughly until chilled.

    2. Strain into 4 (6-oz each) ice-filled cocktail glasses and top each glass with 3-oz. champagne. If desired, garnish with hatch pepper slices, if desired.
