1 ripe avocado, peeled, pitted and mashed | ||
½ c. Hy-Vee sugar | ||
¼ c. packed Hy-Vee brown sugar | ||
1 egg | ||
1 tsp. Hy-Vee vanilla | ||
½ tsp. baking soda | ||
½ tsp. salt | ||
1 c. Hy-Vee flour | ||
½ c. mini chocolate chips |
Directions
- Preheat oven to 325 degrees. Line a baking sheet with parchment paper.
- Combine avocado, sugar, brown sugar, egg and vanilla in mixing bowl. Beat on low speed until well combined.
- Add baking soda and salt. Gradually add flour, mixing to incorporate well. Stir in mini chocolate chips.
- Using a 1-tablespoon cookie scoop, portion dough onto cookie sheet, leaving 1 inch between each portion. Cookies do not spread, so flatten slightly if desired.
- Bake for 12 to 14 minutes or until cookies start to turn golden around the top and edges.
