    1 ripe avocado, peeled, pitted and mashed
    ½ c. Hy-Vee sugar
    ¼ c. packed Hy-Vee brown sugar
    1 egg
    1 tsp. Hy-Vee vanilla
    ½ tsp. baking soda
    ½ tsp. salt
    1 c. Hy-Vee flour
    ½ c. mini chocolate chips

    Directions

    1. Preheat oven to 325 degrees. Line a baking sheet with parchment paper.
    2. Combine avocado, sugar, brown sugar, egg and vanilla in mixing bowl. Beat on low speed until well combined.
    3. Add baking soda and salt. Gradually add flour, mixing to incorporate well. Stir in mini chocolate chips.
    4. Using a 1-tablespoon cookie scoop, portion dough onto cookie sheet, leaving 1 inch between each portion. Cookies do not spread, so flatten slightly if desired.
    5. Bake for 12 to 14 minutes or until cookies start to turn golden around the top and edges.
